Walnut Torte (Father's day recipe)

Preheat oven to 180 °C and grease your cake pan. Dust pan with sugar, tapping out excess, and line bottom with parchment paper.

i used a glass bowl which i think is a stupid idea because it take longer time to bake ):


combine 1 cup walnuts with 1 cup flour in the processor and process until fine. Sift 1/4 tbsp salt and 1/4 tbsp baking powder in nut mixture and stir to combine. Set aside.


In a clean bowl place 4 eggs and 1/2 cup of brown sugar and a splash of vanilla extract, whip until they hold a ribbon when beaters are lifted. 




 fold in walnut mixture and pour into prepared pan.


whisk 1/2 cup milk and 1 1/2 tbsp custard powder in a small saucepot and bring up to a simmer, whisking constantly, until thick. Let it cool and add 1/2 cup manuka honey (can use regular honey too) mix to combine


combine 2 cups walnut pieces and 1 cup icing sugar in a food processor and blend till fine, add in the mixture and 4 tbsp of whisky/ brandy gradually add 1 cup of unsalted butter at room temperature and beat the mixture till it forms a smooth frosting.




After the cake cool, frost n decorate it


Spread a layer of apricot jam, that really make a whole lot of difference (:
